There’s really not much I can eat these days that doesn’t come out of a box, is frozen or is topped with cheese. But last night, Hubs nearly begged (maybe an exaggeration but he was very grateful) for a change up from my prenatal diet of cereal, pasta and ice cream.
So we broke out an old favorite.

Ingredients
1/4 c. packed light brown sugar
1/4 c. olive oil
3 T soy sauce
2 T fresh lemon juice
2 T dry white wine or water
2 lb salmon filet
Directions
Preheat oven to 400 degrees with a rack in the center. Make the glaze. In a small bowl, stir together brown sugar, olive oil, soy sauce, lemon juice and white wine (or water in our case) until sugar is dissolved.

2. Cut salmon fillet into 4 equal size pieces (we did 2 since we used under a pound of salmon), arrange skin side down, in a single layer in a baking dish. Pour glaze over fish and turn to coat evenly.
3. Bake until fish is opaque but still bright pink inside, basting every few minutes with glaze from baking dish for 15-20 minutes. Serve with lemon wedges.

We were out of lemon juice so instead I threw a dash of blood orange italian soda which added the perfect amount of citrusy sweetness. We cooked up some risotto from Trader Joes (frozen section…yeah baby!) that was perfect for the dish. I’ve had this recipe for a while, I’m pretty sure I saw it over on We Are Not Martha originally back in the day, even still they’re one of my favorite resources for recipes that are always interesting and delicious.
